YEAST FOR HOME BREW BEER Yeast for home brew beer is available for different styles of beer. Yeast for ale is probably the most common in beer can kits and will ferment faster and at a higher temperature. In contrast, a lager yeast requires a lower temperature and is much slower to complete fermentation. Do you like Ale, Pilsener, Lager, Bitter, Stout, Dark Ale, Light Ale, Pale Ale, Wheat Beer or some other style of beer? Maybe you like them all? Yea! Yea! Yea! Then your favourite malty hoppy drop comes from one of two basic classes of beer yeast, namely Ale yeast or Lager yeast. When you brew ‘ale’, you use a top-fermenting yeast; and for ‘lager’ you would use a bottom fermenting yeast. What does that mean. Top Fermenting Yeast
If you are yet to start your home brewing hobby you may wonder what this means. With top fermentation ‘ale’ yeast you get froth and bubbles rising to the top of the liquid in your fermenter; and because this froth can expand up through the air lock, it is best to leave a fair amount of head room within the fermenter to avoid this situation and thus avoid the chance of spoiling by contamination from outside air. To maintain the desired volume of liquid for your recipe, top up with fresh water after this initial vigorous top fermentation has eased…maybe after 3 days. In the 'old days', the froth, which is expired yeast, stayed on the top and was scooped off as waste. Modern home brew yeast that ferments on the top then sinks to the bottom as waste and as a consequence the beer clarifys to an amber clear liquid to be drained off as you bottle the beer.
Bottom Fermenting Yeast
Bottom fermentation ‘lager’ style of yeast is slow to work and the froth bubbles on top of the liquid in the fermenter are minimal. Lager yeast also likes to work at a lower temperature; and once again, use your brewing thermometer to monitor temperature according to the type of yeast and supplier's recommendations. Too high a temperature can spoil the flavour and with the temperature too low the yeast fermentation can stop.
Brewing Temperature
Brewing temperature depends on the particular yeast. Packet yeast that come with some beer can kits can work up to about 28˚C for top-fermenting ale yeasts compared with lager yeasts limited to about 22˚C, or less . Control of temperature can be difficult for the home brewer if the climate temperature is higher than recommended for the yeast. So, an airconditioned brewing room is desirable. Where ambient temperature is low, the wort temperature can be kept at optimum by using a heater such as a fish tank heater either suspended into the fermenter or, preferably, inserted into the wall of the fermenter sealed in a grommet. Experiment to set the temperature accurately before using to make your malty hoppy drop.(See Table)
Lager Style
Lager style beers are the most consumed type throughout the world and generally are light gold coloured at about 5% alcohol by volume, are lightly hopped and are served carbonated.
